The fat -soluble (lipophilic) curcumin molecules are embedded in a ring of glucosemolecules (a type of sugar - the so -called cyclodextrins), in such a way that a hydrophilic (water -loving) outside and inside a lipophilic, i.e. fat -friendly cavity.
