Melissa (Lemon Balm, Melissa officinalis) is a species of plant from the genus Melissa in the mint family. The plant can grow up to 30 years old and reach a height of 20 to 90 cm. It grows mainly in the eastern Mediterranean and western Asia. It is cultivated in temperate and warm regions worldwide. While it is used as a spice plant, among other things, the leaves of lemon balm are traditionally used to support stomach function and to relieve nervous stress. The high content of phenolic acid derivatives gives the leaves of lemon balm an antimicrobial, antiviral and anti-inflammatory effect. The most relevant of these secondary plant substances is rosmarinic acid, which is formed from phenylalanine and tyrosine.
