Broccoli (Brassica oleracea) is a cauliflower-related vegetable of the cruciferous family. Originally, broccoli comes from Asia Minor and was initially only known in Europe in Italy. From the 16th century, use then spread via France and England to the United States. Broccoli is rich in a variety of vitamins and minerals: potassium, calcium, phosphorus, iron, zinc, sodium, vitamins B1, B2, B6, E, C and A are plentiful. Sulforaphane is a mustard oil and a powerful antioxidant. The most important of these are summarized under the name vitamin C. Due to the fact that vitamin C can be easily oxidized, it acts as an antioxidant or radical scavenger in the organism. It is also an essential coenzyme in the process of collagen biosynthesis. Since collagen is mainly found in connective tissue, but also in practically all other human and animal cells, a lack of vitamin C can lead to scurvy, whereby the connective tissue is affected on the one hand and symptoms such as exhaustion and tiredness can occur on the other.
